Can You flash a s60 3rd phone to another s60 3rds phone software?

I have a nokia e65 and i was wondering if you could flash it so it ran say the nokia n81′s software instead of its eseries e65 software. Or maybe to a N80. Could you do it by changing the product code to a N81′s then using software updater or would that just seriously stuff the phone ?
